1, I always share my weekly plan with yall in order to have a plan and to stick to it. This week is definitely a bit off track-but in a good way. Lots of fun things going on but I can’t share until I have all of my “New to me cross training” complete. Then it gets one big blog post!
2. I don’t know about yall, but I go through phases in my cooking/eating out. It’s probably because I live alone and don’t have kids but planning my meals out can be tough. And since I am in my car during the day, lunch can be tricky. Well, I am in training all week stuck in front of a computer but it leaves me with the ability to sit and enjoy breakfast and lunch at home.
Breakfast (everyday so far) has been a half bagel, smoked salmon, cream cheese, capers and fruit. YUM. I made a quinoa salad yesterday to eat all week that was randomly put together (no real recipe). I used 1 cup cooked quinoa, chopped red and green bell pepper, grape tomatoes, feta cheese, white beans (thought I had chick peas but was out), and salt and pepper to taste. Very easy and good!

P and I had left overs from Sunday night’s dinner last night. Another cooking light one, Stir-Fried Pork with Broccoli and Cashews-but this wasn’t my fav. Not sure I would make it again. And tomorrow night I am going with my tried and true Cheesy Meatloaf Minis from Cooking light too. I will also be baking these muffins for our trip to Huntsville this weekend. See a pattern? Yes, I love Cooking Light.

5. WOOHOO!! My flight is booked for Hood to Coast! I bit the bullet and spent the money. It didn’t look like flights were going to go down at all. So, I am getting into Seattle late Monday night and staying with Alma. We will play and eat all around Seattle Tuesday and I hope to get to meet up with other bloggers on Tuesday night too. Wednesday begins the NUUN festivities. Fast forward to time to leave and I went ahead and booked the 10am flight home. It cost $100 more but the thought of making an 8am flight after not sleeping from my first relay race doesn’t sound fun. And you can bet I booked a window seat to sleep on the way back.
6. Speaking of window seats, I emailed Delta about my flight back home on Sunday from New Jersey and they apologized and ended up giving me SkyMiles. Talk about sweet customer service. I know some people hate Delta, but every time they have been wrong, they have fixed it. I am very loyal to them. And of course, it is the hub in Atlanta.

That's really nice of Delta to do that for you. Hopefully your Seattle flight this summer will be a much better experience!

DELTA has always come thru for me also. All those races I had planned and was injured, they put aside for future use WITHOUT assessing a change fee!
