Healthy Eats and Pinterest

I’ve been on Pinterest for a while now. I pin tons of things. Especially recipes. But I never seem to actually do anything with them. If you are on Pinterest too, I bet you understand. Well, I actually planned ahead and chose two new recipes to try.
1. Overnight Oats
I love oatmeal. My breakfast of choice is usually oatmeal or two boiled eggs-it just depends on my time in the morning. I have read many posts on other blogs about overnight oats but never tried them. I actually planned ahead of time and followed this pinterest recipe.

OMG overnight oats. Where have you been all my life?? I swear it was better than oatmeal. I actually followed the “main” recipe but omitted the salt and added blueberries in addition to the banana. I did microwave it for a minute or so just to take the chill out. Soooo good!! I can’t wait to try other combinations.
2. Peanut Butter Banana Oatmeal Bars
I often feel guilty eating processed bars so I figured I would give these a shot too. I opted to go for the “better for you version” and used applesauce in place of the brown sugar.

| add egg, vanilla, milk |
 |
| add the peanut butter and banana and mix |
 |
| spread into the pan and bake (my brownie pan is missing) |

They aren’t really a bar type consistency-they are a little soft-kinda like a brownie. The flavor is not very sweet-it’s very natural. It’s still good but I think I would just go with the brown sugar next time. Very easy and tasty, even if they don’t look like it.

Yum, the oatmeal bars look really good. I pin lots of stuff too, I'm pretty good about trying recipes I pin. It's the random crafty things I pin that I'm sure I'll never do anything with!!

We are breakfast twins. I LOVE oatmeal but usually just do it on my days off. On work days, i do 2 hard boiled eggs. Easy for on-the-go – walking ot the train, at work, or post-gym. Yummy! Do you ever put shredded coconut in your oatmeal? It's the bomb!!!!!!!!!!
